Dish name – Pumpkin and saffron tartlet

Creamed pumpkin is easy to make, with 150 g pumpkin, 2 tbsp. water, salt and extra virgin olive oil. It is important to maintain all the flavour of the pumpkin. Cook all the ingredients (without the olive oil) in your Thermomix, at speed 3, heating, for 16 min. After this time, blend at maximum speed. Add the oil, to make the mixture creamier, and 6 strands of saffron. Cool. Cook some diced pumpkin separately, by boiling in vegetable stock. Fill the tartlets with the creamed pumpkin and cubes. Serve with each tartlet topped with chopped green beans and a strand of saffron.
