Make a rich custard with a base created by boiling 250 ml whole milk with a vanilla pod, and mixing in three egg yolks, previously beaten, and 50 g sugar. Bring to the boil and then lower the temperature, leaving to simmer for a further 10 min. Cool in a bowl in the fridge. Half-fill all the tartlets and finish with a few Griottines (cherries macerated in eau de vie).
